Cinnamon Sweet Potato Chickpea Salad

Another winner from Angela. I will probably make all her recipes at some point at the rate I’m going. When this one was cooking in the oven, I wasn’t getting good vibes from it… I thought it was going to be one of those recipes that looked like heaven, but didn’t taste how it looked. Turns out- it tastes like heaven! It was so easy to make, too. I will be making this again in the near future.

Cinnamon Sweet Potato Chickpea Salad

Cinnamon Sweet Potato Chickpea Salad
Recipe type: Entree

  • 1 sweet potato
  • 1 yellow onion
  • 1 can of chickpeas
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • ½ tsp sea salt

  1. Preheat oven to 425.
  2. Add chopped onion, sweet potato, and chickpeas to a bowl and mix in ½ tbsp coconut oil, the cinnamon and sea salt.
  3. Spread on a baking sheet and bake for about 35 minutes.
  4. When they come out, they will be a little on the dry side, so add in the rest of the coconut oil for some moisture.
