Hello on this lovely fall day!
The past couple weeks, I’ve been hooked on an awesome breakfast. Paleo breakfast sandwiches!
In the past month or two, I’ve been doing a lot of reading. I started this blog when I had vegan intentions, thinking all animal products were bad. However, after a couple of my latest reads (Eat Fat Lose Fat by Mary Enig and The Mood Cure by Julia Ross) I have changed my mind. So I have been trying out a paleo diet for the most part and eating how our ancestors ate. When we can, the animal products we eat are free range and grass fed for the highest health benefits. Both Cody and I have noticed positive changes in our body and mood throughout the change.
With that said, here is a breakfast we have been enjoying. These sandwiches are very filling, grain-free and very easy to make!
- 1 cup almond flour
- 4 egg whites
- ⅓ cup butter (grass-fed if available)
- 1 tsp baking powder
- ½ tsp salt
- 1 egg per sandwich
- Preheat oven to 350°F.
- Melt butter over the stove. Mix in almond flour, egg whites, baking powder and salt.
- Scoop ¼ cup of mixture onto a greased pan, or onto a Silpat baking mat.
- Bake for 20 minutes.
- Top with 1 egg per sandwich and a couple slices of bacon.
