Pumpkin Chocolate Chip Cookies

Angela’s recipe! SO DELICIOUS. I’ve made these at least 3 or 4 times now, and I can’t stop. (Except to occasionally make another type of cookie.) I made these for work for “Fat Friday” actually, and made a double batch so there would be enough for everyone. Turns out, I have a TON of leftovers, DARN. But there are worse problems to have in the world. Anyways, here they are!

Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies
Recipe type: Dessert, Cookies

  • 1 flax egg (1 tbsp flax, 3 tbsp warm water)
  • 2½ cups spelt  flour
  • ½ cup sugar
  • ¼ cup agave nectar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ground cloves
  • ½ tsp sea salt
  • ½ cup Earth Balance (or butter)
  • 1 cup canned pumpkin
  • 1 tsp vanilla
  • chocolate chips if you want them

  1. Preheat oven to 350F.
  2. Combine dry ingredients in one bowl and set aside.
  3. In another bowl, first mix butter, sugar and agave until smooth.
  4. Add pumpkin, flax egg, vanilla, and mix well.
  5. Slowly add dry ingredients to wet ingredients.
  6. Stir in chocolate chips.
  7. Spray a couple pans with olive oil and start dropping the cookies on.
  8. You can sprinkle chia seeds or something else on the top for decoration.
  9. Bake for 17 minutes.
